The former Hooters on Bluemound Road in Brookfield has been razed to make room for soup, sandwich and salad restaurant Cafe Zupas.

The building that was Hooters for about 15 years, and Pedro’s Restaurant before that at 17105 W. Bluemound Road in Brookfield, has been demolished to make way for a Café Zupas.

Café Zupas is a soup, salad, and sandwich restaurant chain that was founded in Utah in 2004 and currently has more than 55 locations across the United States. There is currently a Café Zupas location in Greenfield.

Items on its menu will take diners to many corners of the world, from Korea to the Mediterranean and India to the American Southwest.

Some of the items on the menu include the Korean Kick Bowl with arugula and wild rice with smoked brisket, roasted sweet potatoes, edamame, chopped cashews, ginger peanut dressing and sweet chili barbecue sauce. The Brisket Grilled Cheese sandwich has smoked gouda and muenster cheese and a white barbecue sauce. With a Wisconsin influence, is the Wisconsin Cauliflower soup made with cheddar, pepper Jack and whipped cream cheese. Can’t decide between soups? Mix together two for your own creation.
